When it comes to durability, strength, sharpness and design, which sword would a swords master choose, a Damascus steel sword or Japanese samurai katana? Are there any other swords that would outclass the above?

I think it would depend on the type of swordsmanship you followed. I study iaido, which is the art of the samurai, and all I would use is a katana because it is what would work best for that skill.
The best type of sword ever made is the Samurai sword. Both had layering, but the Katana, Wakizashi, and so on also had zone tempering. Combine this with the incredibly intense Japanese craftsman mentality and you have swords that are quite simply the best.
